Did you build your compiler from source code as well? Do you inspect the tapeout for every chip in your system? There are varying levels of trust people are willing to place on their chain of computing, and one must decide based on one's own technical abilities and skills, where that line is drawn. There is always some part of the chain out of individual control, for anything capable of interacting with the modern world.

If the host machine is compromised and logging keystrokes, it will log everything before it gets to the VM. You have gained nothing by creating a clean VM inside the compromised machine.

Are you under the impression that either a carrier or the FCC is going to be unaware of the ability to send spoofed spam via SMS? Is there some goal you hope to accomplish? The worldwide conversion of all carriers from SMS to some new set of protocols that enforce authentication?

Any file-stealing virus worth it's salt would use an encrypted channel to transfer files. You could assume, based on the amount of data being uploaded, that a file is being transferred, but will likely be no way to know which file, from the network side. You could monitor and track file access locally, but if your machine is compromised with a virus, they likely would hide any forensic evidence.
